A light, comforting one-pot meal featuring chicken, rice, bell pepper, and tomato in a savory paprika-infused broth. A wholesome dish inspired by Balkan flavors.
500g chicken breast or thighs, cubed
1 ½ cups medium-grain white rice, rinsed
1 large onion, chopped
2 garlic cloves, minced
1 red bell pepper, diced
2 tbsp tomato paste
1 cup crushed tomatoes
1 ½ tsp sweet or smoked paprika
1 bay leaf
3 ½ cups low-sodium chicken stock
2 tbsp olive oil
Salt and pepper to taste
Heat oil in a large pot. Add onions and sauté for 5 minutes.
Add garlic and bell pepper. Cook for 2–3 minutes.
Stir in chicken, season, and cook until lightly browned.
Mix in tomato paste and paprika. Cook for 1 minute.
Add crushed tomatoes, rice, bay leaf, and broth. Stir.
Bring to a boil, reduce heat, cover, and simmer for 20–25 minutes.
Remove from heat and let rest for 10 minutes. Fluff and serve.
