A light, comforting one-pot meal featuring chicken, rice, bell pepper, and tomato in a savory paprika-infused broth. A wholesome dish inspired by Balkan flavors.

Ingredients

  • 500g chicken breast or thighs, cubed

  • 1 ½ cups medium-grain white rice, rinsed

  • 1 large onion, chopped

  • 2 garlic cloves, minced

  • 1 red bell pepper, diced

  • 2 tbsp tomato paste

  • 1 cup crushed tomatoes

  • 1 ½ tsp sweet or smoked paprika

  • 1 bay leaf

  • 3 ½ cups low-sodium chicken stock

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions

  • Heat oil in a large pot. Add onions and sauté for 5 minutes.

  • Add garlic and bell pepper. Cook for 2–3 minutes.

  • Stir in chicken, season, and cook until lightly browned.

  • Mix in tomato paste and paprika. Cook for 1 minute.

  • Add crushed tomatoes, rice, bay leaf, and broth. Stir.

  • Bring to a boil, reduce heat, cover, and simmer for 20–25 minutes.

  • Remove from heat and let rest for 10 minutes. Fluff and serve.
