1 1/2 pounds boneless chicken thighs or chicken breast, cut into cubes
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup barbecue sauce
6 cups chopped romaine lettuce or mixed greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 red onion, thinly sliced
1 avocado, sliced
1/2 cup ranch or yogurt-based dressing
Optional: 1 cup grilled corn kernels
Optional: 1/2 cup black beans
Optional: 1/4 cup shredded cheddar cheese
Preheat grill or grill pan to medium-high heat.
In a bowl combine chicken, olive oil, paprika, garlic powder, onion powder, salt, and pepper.
Thread chicken pieces onto skewers leaving small gaps between pieces.
Grill skewers for 4–5 minutes per side until cooked through.
Brush barbecue sauce onto chicken during the final minutes of grilling.
In a large bowl combine lettuce, tomatoes, cucumber, and red onion.
Arrange avocado slices and optional toppings over the greens.
Remove chicken from skewers and place over the salad.
Drizzle dressing over the top and serve immediately.
