1 1/2 pounds boneless chicken thighs or chicken breast, cut into cubes
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup barbecue sauce
6 cups chopped romaine lettuce or mixed greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 red onion, thinly sliced
1 avocado, sliced
1/2 cup ranch or yogurt-based dressing
Optional: 1 cup grilled corn kernels
Optional: 1/2 cup black beans
Optional: 1/4 cup shredded cheddar cheese

Instructions

  • Preheat grill or grill pan to medium-high heat.

  • In a bowl combine chicken, olive oil, paprika, garlic powder, onion powder, salt, and pepper.

  • Thread chicken pieces onto skewers leaving small gaps between pieces.

  • Grill skewers for 4–5 minutes per side until cooked through.

  • Brush barbecue sauce onto chicken during the final minutes of grilling.

  • In a large bowl combine lettuce, tomatoes, cucumber, and red onion.

  • Arrange avocado slices and optional toppings over the greens.

  • Remove chicken from skewers and place over the salad.

  • Drizzle dressing over the top and serve immediately.
