A cheesy, layered skillet bake packed with spiced beef, tortillas, sour cream, and enchilada sauce. Baked until golden and bubbling, this Tex-Mex-inspired dish is perfect for weeknight dinners or casual gatherings.
1 lb ground beef
1 small onion, chopped
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: diced tomatoes, avocado, green onions, shredded lettuce
Preheat oven to 375°F. Lightly grease an oven-safe skillet.
Sauté onion over medium heat for 2–3 minutes. Add garlic and cook 30 seconds.
Add ground beef and cook until browned. Drain excess fat.
Stir in taco seasoning and water. Simmer for 2–3 minutes.
Remove half the beef. Layer tortilla, beef, sauce, sour cream, and cheese. Repeat layers.
Finish with a tortilla and cheese on top.
Bake uncovered for 20–25 minutes, until bubbly and golden.
Let rest 5–10 minutes. Add toppings and serve.
