A cheesy, layered skillet bake packed with spiced beef, tortillas, sour cream, and enchilada sauce. Baked until golden and bubbling, this Tex-Mex-inspired dish is perfect for weeknight dinners or casual gatherings.

1 lb ground beef
1 small onion, chopped
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: diced tomatoes, avocado, green onions, shredded lettuce

Instructions

  • Preheat oven to 375°F. Lightly grease an oven-safe skillet.

  • Sauté onion over medium heat for 2–3 minutes. Add garlic and cook 30 seconds.

  • Add ground beef and cook until browned. Drain excess fat.

  • Stir in taco seasoning and water. Simmer for 2–3 minutes.

  • Remove half the beef. Layer tortilla, beef, sauce, sour cream, and cheese. Repeat layers.

  • Finish with a tortilla and cheese on top.

  • Bake uncovered for 20–25 minutes, until bubbly and golden.

  • Let rest 5–10 minutes. Add toppings and serve.
