This cheesy, hearty dish features crispy roasted potatoes, smoky sausage, and a creamy ranch-seasoned finish. Perfect for weeknight dinners or weekend brunch.
1.5 lbs Yukon Gold or red potatoes, diced
14 oz smoked sausage, sliced
1 packet dry ranch seasoning mix (about 1 oz)
1½ cups shredded cheddar cheese
2 tbsp olive oil or melted butter
Salt and black pepper, to taste
Chopped green onions or parsley (optional, for garnish)
Preheat oven to 400°F. Lightly grease a 9×13″ baking dish or sheet pan.
Toss diced potatoes with oil, half the ranch seasoning, salt, and pepper. Spread on pan.
Roast for 25–30 minutes, stirring once, until golden and fork-tender.
Add sausage slices and remaining ranch seasoning. Toss to combine.
Return to oven for 10–12 minutes to brown sausage.
Sprinkle with shredded cheese and bake 5 minutes more, until melted.
Garnish with green onions or parsley and serve warm.
