A quick and easy comfort meal made with roasted potatoes, smoky sausage, and cheddar cheese, all seasoned with classic ranch flavor. Perfect for busy weeknights or weekend gatherings.

2 lbs Yukon Gold or red potatoes, diced
14 oz smoked sausage, sliced
1 packet ranch seasoning
2–3 tablespoons olive oil or butter
1½ cups shredded cheddar cheese
Optional garnish: parsley or green onions

Instructions

  • Preheat oven to 400°F and grease a 9×13-inch baking dish.

  • Chop potatoes into 1-inch cubes and slice sausage.

  • In a bowl, toss potatoes and sausage with oil and ranch seasoning.

  • Spread into baking dish, cover with foil, and bake for 30 minutes.

  • Remove foil, stir, and continue baking for 20–25 minutes.

  • Top with cheese and return to oven for 5–7 minutes to melt.

  • Let rest for 5 minutes before serving. Garnish if desired.
