A quick and easy comfort meal made with roasted potatoes, smoky sausage, and cheddar cheese, all seasoned with classic ranch flavor. Perfect for busy weeknights or weekend gatherings.
2 lbs Yukon Gold or red potatoes, diced
14 oz smoked sausage, sliced
1 packet ranch seasoning
2–3 tablespoons olive oil or butter
1½ cups shredded cheddar cheese
Optional garnish: parsley or green onions
Preheat oven to 400°F and grease a 9×13-inch baking dish.
Chop potatoes into 1-inch cubes and slice sausage.
In a bowl, toss potatoes and sausage with oil and ranch seasoning.
Spread into baking dish, cover with foil, and bake for 30 minutes.
Remove foil, stir, and continue baking for 20–25 minutes.
Top with cheese and return to oven for 5–7 minutes to melt.
Let rest for 5 minutes before serving. Garnish if desired.
