Cheesy Taco Pasta is a one-pan meal that blends taco-seasoned beef, tender pasta, and melted cheese into a creamy, comforting dinner ready in 30 minutes.
1 lb ground beef
2 cups uncooked pasta (shells, rotini, or penne)
1 packet taco seasoning (or 2.5 tbsp homemade mix)
1 small onion, chopped
2 cloves garlic, minced
1 (15 oz) can tomato sauce
2 cups beef broth
1 cup shredded cheddar cheese
4 oz cream cheese, cubed
Salt and pepper to taste
Optional: corn, black beans, green chiles
In a large skillet, cook ground beef over medium heat until browned. Drain fat.
Add onion and cook for 3–4 minutes. Stir in garlic and cook for 30 seconds.
Sprinkle taco seasoning over the meat and stir well.
Add tomato sauce and broth; bring to a gentle simmer.
Stir in uncooked pasta. Cover and cook for 10–12 minutes, stirring occasionally.
Check pasta for doneness. Add more broth if needed.
Lower heat and stir in cheddar and cream cheese until melted and smooth.
Remove from heat and let rest for a few minutes. Serve with toppings.
