2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning, divided
1 tablespoon olive oil
1 tablespoon butter
3 garlic cloves, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
8 oz fettuccine or penne pasta
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Slice chicken into strips and toss with 1 tablespoon Cajun seasoning.
Cook pasta according to package directions. Reserve ½ cup pasta water.
Heat oil and butter in a large skillet over medium-high. Sear chicken 4–5 minutes per side. Remove.
In the same skillet, sauté bell peppers for 3–4 minutes.
Add garlic and cook 30 seconds. Pour in cream and broth. Simmer 2–3 minutes.
Stir in Parmesan and remaining Cajun seasoning. Simmer until slightly thickened.
Add chicken and pasta to sauce. Toss to coat, adding pasta water if needed.
Season to taste. Garnish with parsley and serve hot.
