This Chicken Cobbler Dinner Casserole is a cozy, dump-and-bake comfort dish made with tender chicken, vegetables, a creamy sauce, and a golden biscuit topping. Perfect for weeknights or leftovers.
2–3 cups cooked, shredded chicken
2 cups frozen mixed vegetables
1 (10.5 oz) can cream of chicken soup
2 cups chicken broth
1 tsp garlic powder
1 tsp onion powder
Salt & pepper, to taste
1 cup biscuit mix (like Bisquick)
1 cup milk
¼ cup melted butter
Preheat oven to 375°F. Lightly grease a 9×13 baking dish.
Layer chicken and vegetables in the dish. Sprinkle with seasonings.
Spoon the cream of chicken soup over top. Pour broth evenly over, without stirring.
In a bowl, mix biscuit mix with milk. Pour over the top without mixing.
Drizzle melted butter over the batter.
Bake for 45–50 minutes until golden and bubbling. Let sit 10 minutes before serving.
Use turkey or ham instead of chicken.
Add cheddar to the biscuit mix for a cheesy crust.
