This comforting Ground Turkey Sweet Potato Bake is a wholesome one-dish meal loaded with lean turkey, sweet potatoes, and fresh vegetables—perfect for quick dinners or meal prep.
1 lb ground turkey
2 medium sweet potatoes, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
2 cups fresh spinach
1 tbsp olive oil
1 tsp paprika
1/2 tsp ground cumin
Salt and pepper to taste
1/2 cup shredded cheese (optional)
1 egg, beaten (optional)
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Sauté onion for 4–5 minutes.
Add garlic and bell pepper; cook for 2 more minutes.
Stir in turkey, break into pieces, and cook until browned.
Season with paprika, cumin, salt, and pepper.
Add spinach; cook until wilted. Remove from heat.
Microwave or steam sweet potatoes for 3–4 minutes until slightly tender.
Combine turkey mixture and sweet potatoes in a bowl. Stir in egg if using.
Transfer to a greased 9×13-inch dish. Top with cheese if desired.
Bake for 30–35 minutes until sweet potatoes are fork-tender.
