2 russet potatoes, shredded
8 oz ground sausage or turkey
4 large eggs, beaten
1 cup shredded cheddar cheese
½ cup diced onion
½ cup diced bell pepper
1 cup chopped spinach or kale
1 tbsp olive oil or butter
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp smoked paprika
Peel and shred potatoes. Rinse and dry thoroughly.
Brown the sausage in a skillet. Remove and set aside.
Sauté onion and bell pepper until soft.
Add potatoes in an even layer. Press down and cook 6 minutes. Flip and cook another 5 minutes.
Return sausage to skillet. Season and stir to combine.
Pour eggs into the pan. Stir as they cook, then add greens.
Top with cheese. Cover until melted.
