An easy slow cooker dish with tender chicken and creamy potatoes in a garlic-Parmesan butter sauce. Comfort food at its best—perfect for busy nights.

Ingredients

2.5 lbs chicken thighs or breasts
1.5 lbs baby potatoes, halved
6 cloves garlic, minced
1/2 cup unsalted butter
3/4 cup freshly grated Parmesan cheese
1 cup low-sodium chicken broth
1.5 tsp Italian seasoning
Salt and pepper, to taste
Chopped fresh parsley (optional)

Instructions

  • Pat chicken dry and season with salt, pepper, and ½ tsp Italian seasoning.

  • Optional: Sear chicken in a hot skillet until golden.

  • Add potatoes to the slow cooker and place chicken on top.

  • Melt butter, add garlic, and cook for 1–2 minutes.

  • Stir in Parmesan and remaining Italian seasoning.

  • Pour garlic-Parmesan butter over chicken and potatoes.

  • Add broth around the sides of the crockpot.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • Serve with sauce from the slow cooker and garnish with parsley.
