Smashburger Quesadillas bring together crispy smashed beef, melted cheese, fresh toppings, and a golden tortilla for a quick, flavorful meal that satisfies every craving.
1 lb ground beef (80/20)
Salt and pepper
8 small flour tortillas
1½ cups shredded cheese (American, cheddar, or blend)
½ cup pickles, sliced
¼ cup thinly sliced red onion
Shredded lettuce and diced tomato (optional)
Burger sauce or condiment of choice
Preheat a skillet over medium-high heat.
Form beef into small balls. Place in skillet and smash flat. Season and cook 2–3 minutes per side. Remove and set aside.
On one half of each tortilla, layer cheese, a patty, toppings, sauce, and more cheese. Fold the tortilla in half.
Toast folded quesadillas on medium heat until golden brown on both sides and cheese is melted.
Let rest briefly before slicing and serving.
