1 lb ground beef (preferably 80/20)
1 medium onion, diced
2 garlic cloves, minced
2 tbsp flour
3 cups beef broth (low sodium)
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
1 cup frozen mixed vegetables (peas, carrots, corn)
1/2 cup milk (whole or preferred type)
Dumplings:
1 cup flour
2 tsp baking powder
1/2 tsp salt
2 tbsp melted butter
1/2 cup milk
Brown ground beef in a large pot. Drain excess fat.
Add onions and garlic; cook until soft. Stir in flour.
Slowly add broth while stirring. Add Worcestershire, thyme, bay leaf, salt, and pepper.
Simmer for 10 minutes. Add frozen vegetables.
Mix dumpling dough in a separate bowl.
Drop spoonfuls of dough onto simmering stew. Cover and steam for 15 minutes.
